Mix together yeast, sugar, and water (heated to 105°F-115°F) in a large bowl or mixer. Allow this to bloom for 10 minutes.
Add honey, salt, and 3 cups of flour to yeast. Start mixing together and add butter. Add the rest of the flour 1/2 cup at a time until tacky.
Knead by hand for 10 minutes or with a mixer for about 7 minutes or until the dough feels like a soft ear lobe.
Grease the bowl and place the dough in. Cover with a flour sack towel and rise until double in size (about 1.5 hours).
Punch down the dough and divide it into two equal loaves.
Place in a greased (or buttered) bread pan. Allow to rise until doubled in size (about 30 minutes).
Place in oven at 350°F. Bake for 27-30 minutes or until the tops are golden brown.
Optional - After removing it from the oven, rub it with butter.
Cool for at least 30 minutes before cutting.
